linings. done in the proportion of three pints of blood, to every Jhundred gallons of the compound, if it is to appear distinctly as Pale Sherry ; but if it is only meant to pass for Amber- coloured Sherry, one pint and a half, of this de- lectable ingredient, is enough. The whole mixture, however, after lying ten days or so, is bottled off, or racked into quarter casks, &sc. and is then con- sidered fit to be advertised, and sold as genuine Sherry, under whichever character, as to colour, it has been made to represent.
