BRANDY.
BRANDY proper is the spirituous liquor obtained by the distillation of wine. When first distilled it is perfectly white, or colorless, and only acq_uires a yel– lowish tint from the wood of the cask, in which state it is known and sold as pak brandy. The na– tural color, however, which the spirit receives from the cask, never exceeds an amber tint, no matter how long it may remain therein. All dark brandies are produced by the addition of coloring to the ex– tent desired. Various substances were formerly used to produce the proper color; but burnt BUgar is now used exclusively.
