CORDIAL.

The very best quality of sugar is required, so as to insure a fine, transparent sirup, which must be made according to the instruction in the appen:dix. Cordials which require fining may be fined with the whites of six to ten eggs to the barrel, or hy the addition of a little alum, either alone or followed by a little carbonate of soda or potassa, dissolved in water. In from ten days to two weeks the liquor will be clear. '
