or a pier of brick work, a foot or eighteen inches high. A tub constructed like the above is called a graduation ve.ssel,-vinegar generator. (E.s.sig-bilder.) It is worked in the following way:- "The vinegar-room must be, in the first place, heated to from 100° to 110° Fahr., or till the thermometer in the graduation vessel indicates at least 77°. The heat may then be inodified. vVe now pour through the uppermost cover of the tub a mixture, warmed to 144° Fahr., of 8 parts of proof-spirits, 25 parts of soft water, 15 parts of good vinegar, and as much clear wine or beer. The water should be first heated, and then the vinegar, spirits, and wine or beer may be added to it. Of this inixture, so much should be poured in as is necessary to cover over the second lid two or three inches deep, with the liquor; after which the rest may be poured slowly in as it is wanted. 16
