VINEGAR. 191 Chilli Vinegar.-To 1 quart of the best vine– gar add 100 English chi·llies, cut or bruised, (or ~ pound Cayenne pepper;) digest for fourteen days. Horse-radish Vinegar.-To 3 ounces of the scraped root 1 1 ounce of minced shaJlots, and 1 drachm of Cayenne pepper, add a quart of vine– gar; let stand for fourteen days.
