the clear noyau as much rose-water as will make it

2 gallons, which will be near half a gallon.
PEPPERMINT CORDIAL.
As this is easily and cheaply made, every family should make it for their own consumption. Take of rectified spi- rits 13 gallons; 12 pounds of loaf-sugar; 1 pint of spirits of wine; 15 pennyweights (troy) of oil of peppermint; water, as much as will fill up the cask, (20 gallons;) which should be set up on end after the whole has been well roused, and a cock for drawing off placed in it.
PROCESS OF MAKING ANISEED CORDIAL.
Take of spirits 14 gallons ; spirits of wine, 1 pint from 6 to 8 pounds of loaf-sugar ; 1 J ounce of oil of ani- seed; 2 ounces of finely powdered alum. Dissolve the sugar in one part of the water used for making up, and the alum in the remainder, and proceed as directed in the making up of peppermint cordial. Aniseed cordial does not bear to be reduced below one in five, as part of the oil will separate when too much lowered, and render the goods quite unsightly indeed.
