They ought to he destitute of acidity and astringency, hut stimulating and nourishing, these qualities being so nicely proportioned that the spirit they contain is principally on these grounds that they constitute an excellent beverage for the dyspeptic, the sedentary, and the invalid It is of this class of wines, especially of Canary, that Howell spoke more than two and a half centuries ago : “ If of any others may he verified the merry induction that good wine maketh good blood, good blood causeth good humours, good humours cause good thoughts, good thoughts bring forth good works, good works carry a man to heaven : ergo, good wine carries a man to heaven. It is a sound, useful, and reason- able wine, made in the Island of Sicily. It was originally produced at Bronte, on an estate which belonged to Lord Nelson.
