The specijic weight was determined by means of the picnometer at tlie temperature of 15 c. after the beer had been freed ofthe carbonic acid by standing for some hours in an open cup. The alcnhol was determined by means of the picnometer,after having been distilled from the beer. The extract has been determined after Balling's method,namely,the beer from which the alcohol had been taken was brought to its original volume by adding water,and was weighed by the picnometer at 15.c, whereupon the extract was calculated by Balling's tables. The beer having been reduced to the thickness of extract,it is necessary to heat it for at least an hour,in a platinum bowl at red heat,so that some of the ash surely volatilizes. It may,therefore, be assumed that the statement ofash is generally a trifle too low. It IS of importance to determine the phosphoric acid, because by its relatively large quantity, as in the present case,it proves that the lieer had been brewed with pure malt, same as the relatively small amount of ash shows that no foreign salts have been added, for instance,for clarification or neutralization. It is usual also to find the amount ofglycerine in complete beer analysis—the same has little value. Glycerine always is formed in every vinousfenncntation, but the methods ofdetermining the same are incomplete. Irrespective of the pure faultless taste and bright clear colour of the beer, the same is entitled, according to its composition, to be reckoned amongst the best of some hundreds of beers, ofwhich the analyses are lying before me.
