493 SYRUPS. Sy rups a re made by using loaf or crushed suga r, 8 pounds; pure water, 1 gallon; gum ara bic, 2 ounces; mix .in a brass or copper kettle ; boil until the gum is ·dissolved, then skim and strain through white flann el, after which a dd tartaric acid, 5% ounces dissolved in hot water; to flavor, use extract of raspberry, lemon, orange, rose, pine-apple, peach, sarsaparilla, strawberry, etc., 1h ounce to each bottle, or to your taste.

TO CH ANGE SYKES PROOF INTO AMERICAN PROOF.

Multiply Sykes degrees expressed in hundreds by 114.1, and the result will correspond with American proof. Example.-12.2 above proof Sykes, say 112.2 proof. 112.2 X 114.1 = 128.0202, practically 28 above proof American. Ex ample.-24.6 below proof Sykes, say 75.4 proof. 75.4 X 1J 4.1 = 86.0314, practically 14 below proof American.

TO CHANGE AMERICAN PROOF I NTO S YKES PROOF.

Multiply half the American proof (its equivalent in absolute alcohol) by 1 . 7525, and the difference between the product a nd 100 will gi ve the degrees of Sykes, either above or below proof. Example.-28 above proof America n, say 128 proof= 64 alcohol. 1.7525 X 64 = 112.1600, practically 12.2 above proof Sykes. Example.-6 below proof American, say 94 proof= 47 alcohol. 1.7525 X 47 = 82.3675, practically 17.6 below proof Sykes.
