Checkerberry Draw }4 oz. of wintergreen spray and 1 oz. of red orange syrup into a mug and fill with hot water. Top with whipped cream. It may also be served by using 1 oz. wintergreen syrup and omitting the orange, but the first is to be preferred. The two syrups may be kept mixed and ready for dispensing. Chicken Cream Two oz. of concentrated chicken and J^ oz. of sweet cream. Stir while adding hot water, after seasoning with a little spice. Chocolate 1. — Soluble powdered extract of chocolate, about 1 teaspoonful; hot soda, sufficient quantity to dissolve. Stir well and add loaf sugar, 4 cubes; prepared milk, 1 dessertspoonful; hot soda, 1 cupful; whipped cream, 1 tablespoonful. 2. — Chocolate syrup, 2 oz.; sweet cream, J^ oz.; fill with hot water, 6 oz. Serve with whipped cream. It is essential that the best grade of chocolate, such as Phillips', be used, and the flavor plenty strong to have the drink good. 3. — Add to 1 lb. of cocoa an eoual amount of pulverized sugar; put a heaping teaspoonful of this powder in a mug and make into paste with a little water, then fill with hot soda, stirring briskly. Finish with ice cream or whipped cream. 4. — Chocolate syrup, 1 to 1}4 oz.; 1 egg; cream, 14 oz.; hot water, enough to fill an 8-oz. mug. Prepare as with hot egg checkerberry. 5. — One egg; chocolate syrup, 1J^ oz.; sweet cream, 1 teaspoonful. Shake well, strain and add 1 cupful hot soda and 1 tablespoonful whipped cream. 6. — Place a full J^ oz. of cream chocolate in cup and fill with hot water, or, better, with hot milk and hot water mixed. Top with a' spoonful of whipped cream. 116
