SUMMER Drinks

JULEPS. This form ofdrink, ofwhich the Mint Julep is perhaps the greatest favourite, belongs essentially to America, where in the Southern States it is extremely popular. It ^ reported to have been introduced into England by Captain Marryatt Brandy. Put into a large tumbler two and a half tablespoonfuls of water, a tablespoonful of icing sugar, and two or three sprigs of fresh mint pressed well into the sugar and water to extract the flavour; add one and a halfwineglassfuls of brandy; fill up with shaved ice^ shake well, and serve with a straw, dashing the top of the glass with Jamaica rum. Champagne. Put into a small tumbler one lump of loaf sugar and one sprig of fresh mint, then pour champagne into the glass slowly, and stir gently. Place a piece of orange on top, and serve.

Gin. This is made the same as the Brandy Julep, substituting gin for brandy.
