FLIPS.

{See also fiages 55 and 108.) Ale Flip or Egg Hot.

Beat well together in a jug, or a bowl, four eggs with a quarter of a pound of icing sugar; then add by degrees, stirring all the time, two quarts of boiling old or Burton ale, and half a pint ofgin ; pour backwards and forwards from one jug to another till the flip is smooth and finely frothed, and then serve; grate a little nutmeg on the top of each tumbler. This is a capital drink for a cold night. Brandy. Put into a small tumbler the yolk of one egg well beaten, one teaspoonful of icing sugar, and one glass ofbrandy; fill two thirds with boiling water, stirring well, and dust with nutmeg.
