2 eggs beaten thoroughly 1 tablespoon of melted butter Pepper to taste

Mix this all together in a bowl. Now pre– pare deep fat. Heat it sizzling hot. Scoop out a tablespoonful of the cake mixture and drop it into the frying basket. The cakes will brown in a minute if the fat is sufficiently hot. Drain on brown paper.

CORN MEAL WAFFLES

2 cups of corn meal 1 cup of flour 3 eggs 1 pint of milk 1 tablespoon of melted butter ~ teaspoon of soda dissolved in warm water 1 teaspoon of salt Scald the milk. Beat the yolks of the eggs and add them to the milk. Add the soda. Now add the whites of the eggs beaten stiff. Sift the flour in slowly, and beat until the batter is smooth. [ 65]
