TIPPLE AND SNACK

SPOON BREAD

Put a pint of milk into a double boiler. When it is hot, add a cup of yellow corn– meal. Beat this well, and let it cool. When it has become tepid, add a tablespoon of melted butter, and the beaten yolks of three eggs. Stir these well together, then stir in carefully the whites of the three eggs beaten stiff. Pour into a deep buttered baking dish, and bake.

BEEFSTEAK PIE ROYAL

Cut some filet of beef into small squares and stew in a quart of good stock for one half hour. Now add a number of little sweet onions, and some chipped carrots, a bay leaf, a dash of Worcestershire sauce, and salt to taste. Cook for another twenty min– utes. Thicken the gravy with flour. Let this cool. Pour into a deep baking dish, and cover the top with pie crust. Bake until the crust is a golden brown.
