It is essential to understand that all genuine sparkling wines, I.e., wines which have been treated by the old process discovered In Champagne by Dom Perlgnon more than 200 years ago and known as "Methode Champenolse ", are, strictly speaking, "manufactured": In other words, the wine, as originally pressed from the grapes, has undergone a certain preparation and manipulation which are absolutely necessary In order that It shall become brilliant and leave the bottle with sparkle. Sparkling wine differs from still wine mainly because It retains a certain quantity of the carbonic acid gas, due to the alcoholic fermentation having been allowed to complete Its natural course In the bottle. The amount of skill required In the choice of the most suitable wines and to obtain the correct amount of sparkle. Is very considerable, necessitating expert knowledge.
