Said to have been named after John Montagu, 4th Earl of Sandwich (died 1792), consist of two thin slices of buttered bread with some Savoury food placed between. ANCHOVY Chop 3 boned Anchovies and a hard-boiled Egg, add a piece of butter, pound together until smooth, use as filling between slices of white or brown bread and butter.(For 2 sandwiches). Sardines may be used to replace Anchovies. APPLE & CHEESE Chop very fine a big Apple, grate same amount of Cheshire Cheese, moisten with little melted butter, fill slices of brown bread and butter.(For 3sandwiches). BANANA & CHEESE Mash a Banana, add Lemon juice to suit taste, spread slices of brown bread and butter with soft Cheese, and sandwich together with Banana mixture. (For 2 sandwiches).
