PINEAPPLE AU CREME DE MENTHE

Take a fresh ripe pineapple and pare it, cut it into four sec tions down the center, fit these into an open-mouthed jar, not too large and cover with green creme de menthe. Remember this must be kept covered and shouldn't be used for a few days. You will find this a won derful after-dinner special that will relieve any over-eating feeling. Small sections of pine apple should be cut away with each drink.

GENERAL EISENHOWER PUNCH

Yi lb. bar sugar 1 pt. grapefruit juice 1 pt. grape juice 1 bottle Burgundy Yz pt. Brandy Y^ pt. Apricot Brandy 1 bottle Champagne 1 bottle Sparkling Water Dilute the sugar in sparkling water, put in block of clear ice and add everything but the champagne. With it top off the drinks individually when serv ing. Decorate with cherries. Red and Green.

ST. PATRICKS PUNCH

Yi lb. bar sugar 1 qt. lemon juice 1-1/Sth Irish whiskey l-l/5th Green Creme de Menthe Yi pt. dark Rum 1 qt. Sparkling water

FISH HOUSE PUNCH

Yi lb. bar sugar 2 ozs. Angostura Bitters 1 pt. lemon juice 8 ozs. Peach Brandy 1 qt. Brandy 1 pt. Jamaica Rum 2 qts. sparkling water

Dilute the sugar in sparkling water - Y2 Pt- Then put all but the water in bowl with block of green ice. Stir well, add fruit, green cherries, and when serv ing add the water. Serves 35 5 oz. cups.

Dilute the sugar in a little sparkling water. Put all in Punch Bowl with block clear ice. Stir well and add fruit. Serves 30 5 oz. cups.

TAHITI PUNCH

V/z lbs. bar sugar 2 qts. lemon juice

PICON PUNCH

1 qt. Passion fruit juice 5 oz. Absinthe substitute 2 qts. Brandy 1 qt. medium rum 1 qt. French Vermouth These should be laid away for a few hours with occasional stirring and when ready to serve sparkling water to the extent of 3 bottles added, or add spar kling wine or Champagne in

1 pt. Grenadine l-5th Amer. Picon 1 pt. Brandy 1 qt. sparkling water

Mix all but the brandy in punch bowl over block of ice. When well mixed, serve with fruit floating the brandy on top. A startling drink. Serves 20 5 oz. cups.
