Juleps
First of all, prepare your Julep glass as follows. Fill a tumbler or Balloon glass with chipped ice. Dip 2 or 3 sprigs of fresh mint in castor sugar and insert them,leaves upwards,into the ice. Decorate the glass with any fruit in season. Then: Take several sprigs of young fresh mint and stir them in some sugar and water
until the flavour is ex tracted. Strain into a mix ing glass with some ice in it and add 2 measures of Old Brandy. Stir well and then strain into,the pre viously prepared Julep glass. Add i ds Rum and serve with straws. Using the same method, you can make variations with different basic ingredients.
