WINE.
16 quarts currants, (the juice.) 2 gallons Madeira wine. Let it stand eight days, and draw it off ready for use. No. 39.-CURRANT WINE. To 40 pounds of currants (the juice) add:- 20 gallons water. 30 pounds loaf sugar. i pound cream of tartar. 5 gallons brandy. ! pint orange-flower water. Color; fine and decant when necessary.
No. 40.-STRAvVBERRY WINE. To 40 pounds ripe strawberries add:-
16 gallons soft water. 30 pounds loaf sugar. ! pound cream of tartar, dissolved in hot water.
3i gallons good brandy. 2 quarts Madeira wine.
