— 204 — JERSEY COCKTAIL. (Use a large bar glass.)
i tablespoonful of sugar; 3 or 4 lumps of broken ice; 3 or 4 dashes of bitters (Boker*s genuine only); 1 wine glass of good cider. .Mix well and strain into a cocktail glass; putting in a cherry or medium-sized olive, and twist a piece of lemon peel on top and serve. This is a favorable drink with Jersey people. 1 tablespoonful of sugar; 1 dash of lemon juice, squeeze out the juice of 1 or 2 oranges. Fill the glass with shaved ice. Fill the balance with water, shake or stir well and dress the top with fruit in season, in a tasteful man- ner, and serve with a straw. This is a very delicious summer drink. ORANGE LEMONADE. (Use a large bar glass.)
BISHOP. (Use a large bar glass.)
1 tablespoonful of sugar; 2 dashes of lime or lemon juice. I orange squeezed into it; \ wine glass of water, or syphon selters, or Vichy, dissolve well;
f of a glass of fine shaved ice; Fill the glass with Burgundy;
Flavor with a few drops of Jamaica rum, stir up well with a spoon; dress the top with a little fruit and serve with a straw.
