White Wine Whey.

a Put two pints of • new milk in saucepan,and stir it over a clear fire till it is nearly boiling; then add a quarter of a pint of sherry,and sim* uier for a quarter of an hour,skim ming off the curd as it, rises. Then add a table-spoonful more sherry, and skim again for a few minutes, till the whey is clear; sweeten with loaf sugar to taste.

Wine Lemonade. Use a large bar glass.

Fill glass with fine ice. . 3 or 4 dashes lemon juice. 1 table spoon sugar. 1 wine-glass of whatever kind of wine is desired. Fill up with water ; shake well; dress with fruits in season. Serve with straw.
