PUNCHES.—SANGAREES

Tip-Top. Put into a large tumbler a liqueur-glass of cura9oa and half a tablespoonful of icing sugar; half fill with shaved ice, shake well, add one wineglass of champagne, and fill up with soda- water, adding a slice of pineapple ; keep stir ring whilst putting in the champagne and soda- water. Vanilla. Put into a tumbler a liqueur-glass of vanilla syrup, half a tablespoonful of icing sugar, a wineglass of brandy, and a squeeze of lemon ; fill with shaved ice, shake, strain, and add one slice of lemon. Serve with a straw. West Indian, The same as Brandy Punch, with the addi tion of half a wineglass of ginger syrup, and a little preserved ginger. SANGAREES. In preparing such compounds the amount of nutmeg, etc., to be used, must be according to individual taste. Ale Sangaree. {See also page too.) Put into a large tumbler a teaspoonful of icing sugar, and dissolve it in a tablespoonful of water; put in a small lump of ice, and fill up " with ale (mild. Burton, or bitter, according to. taste) ; dust with nutmeg.
