JERSEY SUNSET Into a straight champagne glass put a scant teaspoonful of sugar, with enough water to dissolve. Add a twist oflemon peel or lime peel and half a whisky-glassful of fine applejack. Now put in enough broken ice to cool, fill with water, and finish with a dash or two of angostura bitters, which should not be stirred in, but allowed to drop slowly through the amber mix ture, imparting to it the sunset hues that probably suggested the name of the drink. In winter, instead of ice, hot water is used, making a most genial drink — a Hot Sunset. Juice of half an orange Juice of half a lime Juice of half a lemon Teaspoonful of raspberry or grenadine syrup 100% gin Fill glass with ice. Shake well with shaker, strain, fill glass with fizz water, and serve. JUNE ROSE
