Lemon—Squash. (use large bar glass) 1 tablespoon sugar. 1 lemon. Peel and cut into quarters. Place in large tumbler. Fill glass with plain soda water, and serve.

Lemonade, (use large bar glass) II/2 tablespoons sugar. 6 to 8 dashes lemon juice. % glass shaved ice.

Fill balance of glass with water. Stir well. Garnish with fruit in season, and serve with a straw. To make this drink pleasing to the taste use plenty of lemon juice and sugar. Lemonade Cordial. (use large bar glass) Make a plain lemonade. Decorate with fruits in season. Slowly pour in one-half pony glass of any cordial requested by cus tomer. Lemonade—Egg. (use large bar glass) 1 egg- Fill up glass with water. Mix well in shaker and strain. Top glass with nutmeg, and serve. Lemonade—Hot. (use large bar glass) 1 tablespoon sugar. 7 or 8 dashes lemon juice. Fill glass with hot water. Stir with a spoon, and serve. Lemonade—Orange. (use large bar glass) % glass shaved ice. 1 tablespoon sugar. Juice of 1 orange. 1 or 2 dashes lemon juice. Fill glass with water. Shake well and dec orate with fruit in season. Serve with a straw.
