Sherry We will deal only with Spanish Sherry here, though the Dominions produce some excellent wines. Sherry is made from thejuice ofwhite grapes and the area ofproduction is in the south-west ofSpain round Jerez de la Frontera. The wines are fortified and blended and are sold under the following marks;— Manzanilla Pale and extremely dry. Montilla Very dry. Fino Pale in colour and dry. Amontillado More body and colour and less dry than Montilla.It is one ofthe most popular marks. Oloroso Full-bodied and rich, ofa golden colour. Amoroso Medium-sweet, rather like Oloroso but lighter. Brown Sweet and dark in colour. Most ofthe Sherries we drink here are imported in cask and bottled by the various merchants, though there are some on the market that were bottled in Spain. These are becomingincreasingly popular,theFino'sand Amontillado's particularly so. They leave one with the impression ofhaving less spirit in them than those that are bottled here.
