German Rhine and Moselle wines are distinctive and very excellent. The Moselles are very light and delicate wines and date from the second century. By law in Germany the label on the wine bottle tells the history of the contents. Originalabfulling means bot tled at the vineyard winery. Australia, Chile and Argentina are now big wine pro ducers and we will be getting familiar with their products Malmsley, from the Canary Isles was a very favorite wine years ago. It's not in evidence now. Madeira from the island of that name is always popular but hard to get at present.This wine stands the heat better than other wines and doesn't readily spoil even when left uncorked. This wine dates from the 17th Century. True cham pagne comes only from Rheims and Epernay regions in the province of Champagne, France, but is imitated in all the wine producing countries throughout the world. Dif ferent grapes are blended to make the young wine. This wine is blended with older wine to make for smoothness. After 6 months it is racked off to clarify it. After the 2nd racking off what is called in France "Liqueur d'expedi- tion"— composed of fine old brandy diluted with old wine and sugar is added. This is the fortifying concoction and according to the amount of this used is determined the sweetness or dryness of the wine. Extra Sec has only of 1% hy volume added. Sec has only 5% by volume added. CHAMPAGNE soon.

Demi Sec has only 9% by volume added. Doux (Sweet) has 12% by volume added.
