Sack A dry golden wine which in Shakespeare's day was sweetened with honey or sugar. Stills There are two main types: Pot Stil' and Patent (or Continuous) Still. They are the appliances used for distilla tion of spirits. Alcoholic liquids used for this purpose contain a large percentage of water, and the still, through the application of heat, separates the alcohol from it. Ullage The name given to a bottle or cask with a faulty cork, . which has allowed some of the contents to leak out. Vat Old English name for a large tub, used for the storage of spirits or wines. ViN French for wine. ViNHO Portuguese for wine. Vino, Vini Italian for wine, and wines. Vino, Vinos Spanish for wine and wines. ViN Rose A pinkish light wine from the Rhone valley. Vintage The name given to a dated wine. Fine wines which are made from grapes in the particular year that the grapes were gathered and show great promise of improving with age. Therefore it is a wine that should be kept. This practice is carried out principally with Champagne,Port, Clarets and Burgundies. Whisky,Blended Ablend ofwhiskiesfromvarious distilleries,can be malted or barley grain spirits(or a blend of grain and malt manufacturedinacontinuous still). The whiskies are agedsep aratelyforseveralyears,then marriedtogetherinspecial mixing vats—afterwards they are stored in casks for further ageing. Whisky, Malt This is distilled in a pot still and is made from "barley malt"—barley which has been moistened and allowed to sprout before being kiln-dried(a kiln is an oven). Whisky, Straight More of a American term, meaning a whisky which has been"bottled in bond ". It is a whisky guaranteed from one distillery, of one age and not less than IGO per cent, proof. It is not a blend, and contains no sweetening or colouring matter. Wine The fermented juice of freshly gathered grapes. Woody A term applied to wine or spirits which have acquired the smell of the cask, probably through being stored in it too long, or it may have been caused through a mouldy stave.
