Insurance Protection Many are the pitfalls to be covered by an Insurance Policy, because in the catering business there are many risks—from falling downstairs, to a cut lip caused by a chipped glass; or from a torn stocking to a ruined suit or dress from a spilt drink. These are only a few of the claims a patron can make an establishment answerable fpr. Then there is the employer's liability to the members of the staff—they can claim through being unable to work as the result of an injury. It may be caused through some negligence, or on the other hand it could be the fault of a fellow- worker—still the claim is against the establishment. Fire Precautions should be taken against a sudden outbreak offire and the staff should be fully conversant with what to do. There should be no case of panic with everyone snatching up the nearest syphon of soda and directing its jet into the flame. It is of vital importance that a fire extinguisher and other equipment be adjacent to the bar, as this may prevent any small outbreaks from developing into something more serious. Pests These undesired guests must be dealt with severely and quickly, they should be given no chance to breed—bythe way the reference is to the insect and rodent types(not the one who frequents most places and pays for his drinks). A cockroach scampering along the counter-top will cause much raising of eyebrows, and the little bar flies which hover around the sliced lemon and orange are more than a menace, especially when they find their way into the Bitter bottles. Pink elephants, though,should be encouraged as they are a great asset to the bar business. Canapes and Savoury Snacks There should always be a liberal supply of"Blotting Paper" available for the patrons of a Cocktail Bar. Freshly roasted salted almonds and cashew nuts, olives, potato crisps and cheese straws can be offered throughout the service, no matter what time of day.
