Here, then, is the suggested wardrobe for the well-dressed bar, and afew hintson the usesand peculiar habits ofthe differentitems.

THE BARTENDER'S TOOLS

An Electric Mixer. Not really a"must have", but a great asset for the mixing ofsuch drinks as Frozen Daiquiris and Sours, etc. We admit that such drinks can be shaken by hand, but two tons of potatoes can also be peeled by hand but why do so when a machine will do the job much more effectively and speedily ? This brings up the old story of a certain bar which boasted of its famous Gin Fizzes. The owner employed a whole troupe of ebony black bartenders—each one used to shake the drink fiercely, and when tired would pass on the shaker to his next colleague, and so on until the drink passed through the hands of some eight perspiring humans, who gained a few seconds' respite before commencing all over again. How much easier and cheaper it would have been tojust press the starter button of an up-to-date electric mixer. Two Silver-plated or Chromium Cocktail Shakers(holding approximately one pint). One to be used for blends which contain highly flavoured ingredients, and the other for drinks of a more delicate type. These shakers must be well washed directly after use, and at the close of business or at any slack period they must be thoroughly dried inside, to prevent any chemical reaction setting in. A wet shaker stored away overnight will, in the morning, contain that very poisonous deposit known as verdigris, which could be a very dangerous ingredient to any cocktail. Note also that the cheaper alloys used for the production of shakers, will react badly to liquors and acids, they impart an unpleasant brassy taste to the drink. One Large Cocktail Shaker,Plated or Chromium (holding approximately one quart). It is most essential to have a big shaker when catering for a large party ordering the same particular drink. It saves too many bites at the one cherry,and also valuable second?. One Boston-type Cocktail Shaker, Plated or Chromium (holding approximately one quart).
