but before proceeding we must note some of the drinks which are prepared without the aid of such equipment, where even a shaky hand will upset their equilibrium. Blended Liqueurs The most popular drink which falls into the category of such sensitive blending bears the French name of"Pousse Cafe" (not to be confused with the neighbour's house where the cat drops in for a saucer of milk), and is strictly an after-dinner drink. It is prepared in a special thimble liqueur glass, which can hold anything from three to seven liqueurs, each ingredient floating gently on the other without fear of mixing. The drink containing the seven liqueurs when held to the light resembles those beautiful colours after a rainfall in a summer sky—hence the English name of"Rainbow Cocktail As already mentioned, unless one knows how, this is a tricky drink to make, therefore let's see how: pour each ingredient gently over the back of a spoon so that the liqueur will run slowly down the inside of the glass and flow evenly over its predecessor. There are several types of fancy liqueur drinks similar to the Rainbow Cocktail, but having delved at length into the mysteries of mixing we come to the closing stages, and to all the other types of drinks which make up the bartender's repertoire. In previous pages ofthis chapter several ofthese mixtures were mentioned in passing, but in order not to confuse the reader they were not discussed fully and are now presented alphabetically, followed by the"Who's Who"of ingredients, to enable one to distinguish the aromatics from the others. MIXED DRINKS AND THEIR DEFINITIONS Aperitif The French name for a drink which is intended to sharpen the appetite. Mostly short, dry and fairly mild. Bitters Various brands of secret alcoholic formulas. Aromatic types are made from bitter roots and bark. Others are fruit flavoured extracts, obtained from the rinds of Oranges, or Peaches and other Citric fruits. Cobbler A summer drink made of iced wines or spirits, with fruit juices and liqueurs, served in a fairly large wine goblet glass, containing crushed ice, and decorated with fresh fruit. 78
