Cleanliness is next to godliness—make a habit of wiping your forehead and face with a clean handkerchief, it will remove the dirt and grease. Don't be caught by not having one of your favourite agent's brand of wine or spirit—keep a special trade locker which will always contain that emergency bottle. If a fly takes to the customer's drink, don't fish it out and wring it out and then hand the drink back ; give the customer a new one. Politics,religion and scandal are dangerous subjects to discuss over the bar-counter. John Collins is not a bartender—itis the name ofa long drink originally based with Hollands gin. There was a brother, Tom Collins, who had a base of Old Tom gin; now the family has grown—^there is Mike Collins, with an Irish whiskey parentage, Sandy with Scotch, Ivan with vodka, Frenchy with brandy and many others.
