Punches

Punches are one ofthose drinks which can be served hot or cold, according to season. It is usually the custom to decorate them when cold with fruits in season or, when hot,with a slice oflemon on top.

I pint Lager I bottle of Champagne

CHAMPAGNE PUNCH Put plenty of ice into the shaker and then add: I tablespoon of Curacao I tablespoon Gomme Juice of\lemon Shake well and strain into a wine glass. Fill up with chilled Dry Champagne. Decorate with fruit and then serve with a spoon. DRAGON PUNCH This is very much a party drink. Put the following ingredients into a large glass bowl. This recipe is sufficient for four people: 1 Sherry glass ofDry Sherry 2 Sherry glasses ofBrandy ^ pint Stout

Decorate with fruit after plenty of crushed ice has been added to the bowl

MILK PUNCH Put plenty of ice into the shaker and add: I Sherry glass ofBrandy

^ Sherry glass ofRum I tablespoon Gomme Fill up with Jersey milk

Shake well and strain into a tumbler and garnish with nutmeg
