mallet is perfectly suitable, but find a cleaner foundation than the floor to do the hammering on. One Ice Pick. Not, repeat not, to be used for punching holes in cans of fruit juice. One Ice Scoop. Hands were made before ice scoops, but it is more hygienic to shovel the ice into a shaker, than to thrust it in with the hands—anyway it prevents chilblains during the winter season. One Ice Bowl and Tongs. Either for use on the counter to enable patrons to help themselves to more ice if desired, or for the assistants to use for the table service. One Muddler. This is a wooden tool, generally made from lignumvitae. It is used for pounding up either sugar and mint for Juleps, or sugar and Angostura for"Old-Fashioneds"and other mixtures of a similar character. Champagne Cooler. At least one, and more if possible. It will depend whether others can be obtained from another depart ment of the establishment if required. Special Champagne Stopper. For preventing the effer vescence escaping, whilst awaiting the next order for a Champagne Cocktail. Two Decanters. One good heavy cut-glass decanter, which is traditionally used for Vintage Port, and the other one can be of a less valuable kind, to be held ready for a probable demand for a decanted red wine, or it can be used for a cheaper port. Note, these decanters should be of clear glass, thereby showing off the wine to its best advantage. Directly after use decanters should be rinsed out. Do not use any soap powders or soda during the process ; should the decanter be badly stained it can be cleaned by shaking a handful of small shot in it. Four Containers. Either tins orjars,for holding thefollowing sugars: lump, granulated, brown and powdered. Four Spice Jars. With close, well-fitting covers to prevent the aromatics dispersing into the air. They are for holding the following: cloves, grated nutmeg, powdered cinnamon, and celery salt.
