Foreword
Many more people are now in a position to provide mixed drinks or cocktails for their friends. It is one of the signs of the more prosperous timesin which welive. This book tells you how to prepare a very widerangeofdrinks, including many ofthe established favourites as well as a number ofmy own invention. I am quite certain that many readers will soon begin inventing their own drinks once they have studied the general technique. There is no mystery about the business! In fact, it is lai-gely a question ofdiscovering for yourselfwhatfascinating combinations ofingredients can be made.You will probably devise a particular concoction which will become afavourite among your friends and acquaintances. Indeed, it may be so good that I shall have to include it in a future edition ofthis book I No oneseems to knowjust how the name'cocktails' originated. It was certainly mentioned in American literature in the late 1870's. The story goes that somewhere in the Caribbean the local planters and others werefond ofmixed drinks. These were known as 'Dracs', possibly a corruption of Drake, whose exploits there were still famous. The local bartenders would mix these with the slender root ofa plant known as Cola de Gallo, which in English means'Cock's Tail'. The taste for these drinks spread wider and wider, and they eventually came to be known as cocktails. As for me, I have worked in many famous hotels in England and abroad. I started at the Carlton,in London,which was one of the most famous hotels in the world and which is no more. Later, I worked at the Semiramis in Cairo and then gained a great deal of experience all over Europe. I opened the Buttery Bar at the Hyde Park Hotel in London some years before the last war and when the war was over I opened a new Cocktail Bar at Fleming's Hotel in London. In 1950 I went to the Piccadilly Hotel and have been Head Bartender there for a number of years. So much for my experience in the art of mixing drinks.

Let me conclude by mentioning that for a long time now there have been international competitions all over Europe for mixing cocktails, and several prize-winning drinks have become famous. In 1958 I led the successful British team in Brussels during the World Fair, and this was the crowning point of my career. I now wish you many happy hours of mixing—and drinking!

Basic Ingredients
You can prepare a great variety of good drinks from a very short list of ingredients. Here is my own personal choice: Dubonnet,Gin,Vodka,Scotch Whisky,Bourbon Whisky, Rye Whisky,Sweet Vermouth,Dry Vermouth,Angostura Bitters,Pernod,Rum (light and dark),Cointreau,Apricot Brandy, Cherry Brandy, Grenadine, various fruit juices, cube sugar, nutmeg, oranges and lemons,castor sugar. As many drinks MUST be served cold, you should always have chippedice available.
Measures
Each recipe in this collection represents one drink for one person. The proportions shown are based on the standard bartender's measure. A standard spirit bottle contains abf fl. oz. To deter mine the measures per bottle, refer to the table below: Quantity Mumber of Measures Measure {Imperial) of Measure per Standard Bottle ^ gill = I fl. oz. aGf I gill = f fl. oz. 32 standard bartender's measure In case it is wished to translate these measures into their metric counterparts, the following comparison is provided: A standard bottle contains f litre (75 ml.). J gill = 2.85 ml. i gill = 2.36 ml. I ds means'one dash'from an Angostura sprinkler.

Glasses and Bar Accessories
There are no hard and fast rules about the right kind of glass to use for a particular drink. Convention has evolved certain shapes of glass for particular drinks, but fashions change considerably and who knows what our grandchildren will be drinking out of? However, shown below are some typical modern glasses which will serve as a guide.Those of you who like to be'with it' will no doubt keep an eye open for the latest fashions and change your glass cupboard from time to time. Many of you will be more drawn to older shapes, and can spend many rewarding hours looking over thejunk shops and stalls and buying up odd glasses. There is a wide range,of bar accessories from which to choose. A fine selection is available at such stores as Selfridges and Harrods.

Cocktails
To obtain the trueflavour and enjoyment ofthese drinks, you must adhere rigidly to the prescribed procedure. STIR AND STRAIN.Putsome ice in a mixing glass and stir in the ingredients until cold. Then pour the contents through a strainer (see illustration on page 15) into another glass. SHAKE AND STRAIN.Put some ice in a cocktail shaker, pour in the ingredients and then shake shortly and sharply unless otherwise instructed. Then strain the drink into the appropriate glass. OLD-FASHIONED.An Old-Fashioned drink should be served in an Old-Fashioned glass (see illustration on page 15), and is prepared in the following way, the drink being mixed and served in thesame glass.Putalump ofsugar and a small amount of water in the glass. Add the Angostura (where directed) and stir until the sugar is dissolved. Then stir in the other ingredients until cold.
