PREFACE From time immemorial,man has sought ways and means of pleasing his palate with food and drink. This book is dedicated to the legions who seek recipes to bring cheer and conviviality into any gathering and who wish to present to their guests, and furnish for themselves, the beverages which will please the modern palate as did the nectars of old please those of the ancients. Recipes set down in the pages which follow have been chosen with care and consideration for the taste of every person who partakes of so-called "mixed drinks." The author has searched the highways and by-ways of the world to gather into these pages the very best that the greatest concocters of "mixed drinks" have to offer. If each recipe, as set forth, is carefully carried out, the resulting compound will be found not only delectable hut delightful to every taste. It has been the honest intent of the author to set forth the widest selection of mixed drinks or cocktails carried between any two book covers in the world. If this book pleases the reader and fulfills its purpose as a purveyor of ways and means to bring forth palatable and refreshing results, the author feels well repaid for his long and tedious work.

PARTY BEVERAGES

DIRECTIONS In preparing, for ihe readers, the recipes in this edi tion, the author has endeavored to be concise and to pre sent them simply. The recipes listed, unless otherwise marked, are for the preparation of two drinks. To prepare more, multiply the portions to the number of drinks required. To chill a glass use a cube of ice, slide the glass so that the ice takes on a spinning motion; when chilled, toss out ice and excess water, strain in the beverage and serve. To frost a glass, first chill it, then wet the inside rim with a small piece of lemon, dip into powdered sugar, toss out excess ice and water, strain in the beverage, deco rate and serve. Measuring devices, as listed in the recipes, can be ob tained at almost any glassware, novelty or liquor supply store. These are: Jigger—two ounces Pony—one ounce Spoon—a bar spoon, about half the size of a teaspoon. A spoon of dry ingredient, such as sugar, should al ways be level, never heaping. Measurements should be carefully adhered to and ex actly as set forth in the recipe. Other ingredients than those called for may produce a good drink but not what is called for in the recipe. In many recipes, sugar syrup is called for. Here a sub stitution of dry sugar can be made, using the dry sugar spoon for spoon where the syrup is prescribed. Lemons, too, may be substituted for limes, if the mixer desires. However, avoid the use of lime peel as it has an unpleasant taste. In cutting peels to garnish drinks, cut as thinly as pos-

sible and never place the peel IN the drink, merely twist it and hang over the edge of the glass. Ice is an important ingredient in the mixed drink. Three forms of ice can be used. They are: Shaved—shaved from cakes of ice with a shaver. Cracked—large pieces placed in a towel or cloth and broken to bits. Cubes—such as taken from trays of an electric re frigerator. Use of the ice is important also. In shaking, two or three cubes should be placed in the shaker. In a stirred drink, use a glass half filled with shaved ice. Another integral part of drinks is the egg. Silver Fizz means use the white of the egg only. In mixing drinks, use bitters, cordials, syrups and the like cautiously, since a slight bit too much or too little may spoil the drink. In grating nutmeg or adding other spice to drinks, add to each drink individually to obtain the proper proportion. Chill slowly. Champagne. Old Vintage wines—serve at a temperature of 45 degrees. Young Vintage wines serve at a temperature of 38 degrees. WINES Golden Fizz—means use only the yolk. Royal Fizz—means use the whole egg. Cream Fizz—^means add cream.

Non Vintage wines—serve at a temperature of 32 degrees. White Burgundies—serve at a temperature of 50 degrees. Red Burgundies—serve at a temperature of 65 degrees. Moselle wines—serve at a temperature of 45-50 degrees. Sauternes—serve at a temperature of 42 degrees. All table wines should be served room temperature. WHEN TO SERVE BEVERAGES Appetizers—Pale Dry Sherry with bitters, Vermouth, Dubonnet or cocktail. With soup—Sherry wine. With fish—Rhine wine. Moselle, Sauternes, White Burgundy. Entree—Light Claret. Roast—Claret or Red Burgundy. Game—Champagne. Pastry—Maderia. Cheese—Port wine.

Fruit—^Tokay, Malaga, Port wines. Coffee—Cognac, Liqueurs, Cordials.

If you do not possess all of the ingredients called for in a recipe, it is not unwise to experiment, but it is not always to the best advantage. Necessity is the mother of invention and has often been the basic secret of many a delightful mixed drink.
